White vinification. Temperature control through the automatic air-conditioning system. Refining in steel tanks until January/Ferbuary. Destemming and cooling of the handmade harvested grapes, then short maceration with the skins. The juice is then separated from the solid parts through the pressing and decanting phase, then sent to fermentation. The whole process is made at controlled temperature. The obtained wine is filtered and kept at low temperature, so that it naturally becomes steady and keeps the fruity features of the fermentation. No chemical treatment is applied.
Straw colour and green shades. Pleasant scent of fruit and not too strong aroma. Wine of medium body, fairly sour, dry but velvety and soft in the end.
Excellent as aperitif or with typical Mediterranean recipes as salads, pasta, shellfish and white meat. Perfect with savoury and spicy Asian recipes too.
